Why we built it this way
Roast level changes which part of the coffee speaks loudest. Lighter roasting preserves more of what happened at the farm and during processing: origin, variety, altitude, fermentation, washing, and all the work before the roaster.
As the roast gets darker, the roaster has a larger hand in the final flavor. Midnight Rider sits between those worlds. The medium-roasted coffees keep sweetness and natural character in the cup, while the darker coffees add body, depth, and roast character.

What is a Cowboy Blend?
Midnight Rider combines medium and dark roasted coffees in one blend. That lets the medium roast keep more sweetness and origin character while the darker component brings body and roast depth.
Does dark roast have to taste burnt?
No. Dark roast can be deep, heavy, and roast-forward without tasting like charcoal. Good roasting still matters after the beans get dark.
Are the tasting notes added flavors?
No. Unless a coffee is specifically labeled flavored, tasting notes describe flavors naturally perceived in the coffee from origin, processing, roast, and brewing.
